Mexican Party Food is filling and easy to make, here are some tasty Mexican party recipes.

Spicy Vegetable Tacos

Makes 12 (adjust quantities accordingly)

Oil for frying
1 large onion finely chopped
1 chilli finely chopped
2 crushed garlic clove
1 large tin kidney beans
3 skinned and chopped tomatoes
150ml/5 fl oz vegetable stock
11/2 tbsp tomato purée
40g cooked sweetcorn
seasoning
12 taco shells
150g/6oz grated cheese

1.To make filling heat the oil in a pan. Add onion and cook until transparent. Add chilli and garlic and cook for a further 2 minutes.
2.Add beans, tomatoes, stock, tomato puree and green pepper and bring to the boil. Reduce heat, cover and simmer gently for 10 minutes
3.Add sweet corn, seasoning (salt and pepper) to taste. Cover and cook for a further 5 minutes or until the mixture has thickened.
4.Guests can then fill their own taco's with the vegetable mix and add salad and cheese to suit.

Beef Fajitas

Makes 12 (adjust accordingly)
100ml 31/2 fl oz red wine
Rind and juice of 2 limes
2 garlic cloves crushed
2 tbls Worcester sauce
2 tsp sugar
½ tsp dreid oregano
½ tsp dried basil
700g 11/2lb rump or lean frying steak
60ml 21/2 fl oz oil
10 slices pring onions 1 green and 1 red pepper sliced
12 tortillas
Lime wedges and coriander to garnish

1.Mix red wine, the rind and juice of the limes, garlic, Worcester sauce, sugar, oregano and basil together in a bowl
2.Cut the meat into strips and add to the mix to marinate for 30 minutes
3.Drain meat keeping the marinade
4.Heat the oil in a pan and fry meat, you may have to do this in several batches, brown quickly all over and remove from meat from pan.
5.Add marinade to pan and reduce to thicken
6.Return all meat and peppers and onions to the pan and heat through coating well
7.Warm tortillas in oven or microwave
Guests can help them selves filling each tortilla with the beef and pepper mixture and adding a relish from the recipes below.

Mexican Party Food Dips and Crudities

The following dips can be serves with carrot batons, cucumber or nachos

Avocado and Soured Cream Relish (serves 12)

2 ripe avocados, peeled and diced
pinch salt
300ml/1/2 pint soured cream
Mash the avocado with the soured cream and seasoning and simply serve!

Chilli and Tomato Relish (serves 12)

4 tomatoes
1 large onion
3 tsp chilli sauce
1 tbsp fresh coriander
pinch salt
pinch sugar
Finely dice tomatoes, onions and coriander, mix well with rest of ingredients and chill before serving
